Cut from the shoulder, the flat iron is one of the most tender steaks on the animal — second only to the tenderloin. It has a rich, beefy flavor and a fine grain that soaks up marinades beautifully. Great for weeknight grilling or a quick cast iron sear. Raised on open pasture, free from hormones and antibiotics.
